Our cows are Longhorn cattle that have been with us since their first calf, and even some have been with us since they were born. Longhorn beef stands out for its naturally lean build and nutrient profile that is often considered as healthier than many traditional beef cuts. Longhorn beef doesn’t consist of a heavy marbled steak- instead, the meat is clean, firm, and lean, which influences both flavor and nutritional values.
Longhorn beef delivers plenty of complete protein and all of the essential amino acids your body needs, asking it excellent for muscle building, tissue repair, and maintaining a healthy metabolism. Thanks to its naturally lean composition, Longhorn meat contains significantly less total and saturated fat, and even compares favorable to skinless chicken in terms of fat content. Longhorn beef also provides valuable Iron, Zink, B Vitimins, and Selenium. When Longhorns are grass-fed rather than grain-finished, the meat often contains higher levels of omega-3 fatty acids and conjugated linoleic acid which are fats associated with anti-inflammatory effects and potential heart benefits.
Each year, our Longhorn cows are released out with an Angus bull to breed back to. This cross brings us to our vision in what we want to see from our beef. Breeding an Angus bull with our Longhorn cows turns their calves into a ”Hybrid Vigor”. These calves have been a blessing to work with each year and we can not say enough about them. They are smaller and more narrow shouldered calves making the calving experience smooth. They thrive on forage and rough country which makes them efficient, low-maintenance, and resilient for our neck of the woods.
The Angus brings the sizzle to the Longhorn’s efficiency. Even with the lean beef from the Longhorn, the marbling and tenderness is improved. The ribeye size tends to be bigger and the finished beef as a whole provides great flavor. With our Grass-Fed and Pasture Raised environment, Angus compliments the Longhorn lean beef with improved finish and flavor.
Our Hybrid calves also have shown to have thicker hind quarters than the pure Longhorns and all around finish loud and proud with a beautiful finishing weight.
